Weekly Menu Plan


Between picking up and dealing with 40 lbs of chicken breasts tomorrow, volunteering at my son's school, and taking off to the beach for the last half of the week (my son is off school), this week is going to be busy!

My husband and I have also recently started P90X.  I've been working out with Wii Fit for the past year, and wanted to step it up a bit.  I'm still processing how to work a lower carb menu into place.  I normally just eat what I want, when I want, and that definitely does not include much protein!  I'm a high carb kinda girl. 

So for the first time, I have made a complete weekly menu.  Yep, breakfast, snacks (2), lunch and dinner.  I'm hoping having a whole plan in place will help so that we're not constantly thinking about what to eat.  (I didn't include it here, because I didn't want to bore you.  haha! ) 


Monday:  Feta & Kale Stuffed Chicken Breasts, Mashed Potatoes, Broccoli

Tuesday:  BBQ Chicken, Green Beans, Basmati Rice

Wednesday:  Salsa Chicken & Black Bean Soup

Thursday:  Fish Tacos

Friday:  Chicken Kabobs, Basmati Rice, Ginger Slaw  (I'm seriously in love with the dressing on the slaw right now!)
 
Saturday:  Dinner with family

Tuesday:  Grilled Halibut Steaks, Mashed Potatoes,

Wednesday:  Spicy Black Bean Cakes, Lime Sour Cream

Thursday: Crockpot Chili, Artisian Bread, Spinach Salad

Friday:  Homemade Pizza (didn't end up making last week)

Saturday:  Dinner out

Weekly Menu Plan


This week I have the Azure order coming in.  Other than that, I don't feel like doing much grocery shopping beyond getting a few basics like milk, yogurt and cheese. 

What I am planning on doing?  Taking a few recipes and doing some Cooking Ahead.  I've always thought that Cooking Ahead or doing Freezer Cooking days wouldn't work for us since we don't eat casseroles and we like a lot of variety in our meals.

BUT, I have been doing some rethinking on the idea.  There are a few meals that the whole family loves that could be made ahead and frozen.  Hmmm.  That would be helpful....

Two weeks ago, I bought 40 lbs of tomatoes, and made close to 20 lbs into Roasted Tomato Marinara sauce.  We ate one batch (I made 6), and froze the other 5 in glass quart jars.  The sauce is amazing over pasta and as a pizza sauce (more like an authentic Italian pizza sauce).

Therefore, I am going to attempt to make extra Turkey Meatballs, Baked Chicken Taquitos, and Pizza Dough to put into the freezer for those nights when I'm just not feelin' it.  Oh yeah, and here's our menu plan for the week  :)

Monday:  Shrimp Fried Rice

Tuesday:  Orzo with Tomato and Fried Tofu

Wednesday:  Turkey meatballs over Roasted Tomato Marinara sauce, pasta, salad

Thursday:  Baked Chicken Taquitos, black beans, salad

Friday:  Homemade pizza - I'm thinking Greek or Pesto Chicken.  Hmmm, decisions...

Saturday:  Fish Tacos

After not getting around to menu planning the last couple weeks, I am so happy to be getting back with the routine.  Last week I felt completely scattered!  
 

Monday:  Penne with Grape Tomatoes and Mozzarella, Bread, Corn on the Cob

Tuesday:  Burritos

Wednesday:  Whole Wheat Spaghetti with Veggies, Tofu and Peanut Sauce

Thursday:  Pepperoni Pizza, Green Salad

Friday:  Dinner Out

Saturday:  Tuna Ceviche with Corn Tortillas, Black Beans

Funny thing is that we went to Grade and Middle school together, and one time I cleaned her husband's teeth (figured out the connection while talking to him). It truly is a small world. :)

Weekly Menu Plan


This last week I took some time to reevaluate my recent menu plans. My least favorite time of day is 4:30 - 6:30pm, when I'm trying to get dinner together and Willow is fussy and wants to be held constantly, but isn't ready for bed. Most days I'm totally stressed out trying to get dinner together and on the table for all of us at the same time.


Dinner time as a family is honestly not a relaxing experience for us right now. Reality doesn't match what I feel like it should look like in my head! Once we all sit down, Aspen and Journey invariably argue over which chair they are going to sit in or who's going to pray. Half the time I hear "do I have to eat that?" or "how many bites do I have to eat?". I have to hold Willow and try to eat at the same time. Holding on a real conversation is impossible, and I end up inhaling my food. Can anyone relate???

So I've realized two things:
1. I need to plan more crock pot/easier type meals for the days we all eat together as a family.
2. I'm not going to feel guilty about the 2-3 meals a week my husband and I eat together without the kids (after they go to bed).


Monday: Moroccan chicken stew with sweet potatoes, couscous, spinach salad
Tuesday: Homemade tomato basil soup with fresh mozzarella, crusty bread
Wednesday: Chinese chicken salad

Thursday: Crockpot falafel, hummus, pita bread

Friday - Monday: Hanging with family for Memorial Day weekend!

It's the last week of the month, so naturally I'm out of grocery money :) I'm pulling from what I already have on hand, and am happy that there wasn't anything too exciting on sale this week (budget update to come in the next couple days).
