It's going to be super hot here in Portland this week and I'm 37 weeks pregnant so I'm planning some easy, lighter meals for the week. I'm also hoping to escape to the beach at the end of the week while my husband fishes. Here's the plan..
Monday: Almond spinach salad, Spicy Indian Chicken & Mango Curry
Tuesday: Grilled salmon, green salad
Wednesday: Brawt kabobs, coleslaw, rice
Thursday: Engish muffin pizzas, veggies and dip
Friday: depends on what we do for the weekend...
Saturday: probably dinner out on the way home from the beach
